The Art of Production

- Shading: About 20-30 days before harvest, tea bushes are covered to block direct sunlight. This crucial step boosts chlorophyll and L-Theanine levels, giving Matcha its brilliant green color and savory umami flavor.
- Harvesting: Only the youngest, most tender leaves from the top of the plant are carefully hand-picked.
- Processing: The leaves are briefly steamed to halt oxidation, preserving their color and nutrients. They are then air-dried. Stems and veins are painstakingly removed, leaving only the pure leaf flesh, known as tencha.
- Grinding: The tencha is then slowly stone-ground, often with traditional granite mills, into an ultra-fine, talc-like powder. It can take up to an hour to grind just 30 grams of high-quality Matcha.

Not all Matcha is created equal. The quality is primarily determined by which harvest the leaves come from.
