He began roasting small batches of high-quality, single-origin beans in a tiny 183-square-foot potting shed and made a simple but revolutionary promise: he would only sell coffee less than 48 hours out of the roaster.

He delivered the fresh beans to local customers from the back of his Peugeot 505 wagon. The name "Blue Bottle" was a tribute to Franz George Kolchitsky, the proprietor of Central Europe's first coffee house, "The Blue Bottle," in Vienna in the 17th century. This nod to history signaled Freeman's intent to return coffee to its artisanal roots.

The brand's first permanent location was a small kiosk in a garage in San Francisco's Hayes Valley, which quickly became a cult destination. From these humble beginnings, Blue Bottle has grown into an international brand, but its core mission remains the same: to serve delicious coffee at its peak flavor.
